Homemade Cinnamon Rolls

Homemade Cinnamon Rolls feature a soft, yeasted dough rolled with a cinnamon-sugar filling and topped with a creamy cream cheese icing. The dough is enriched with butter, sugar, eggs, and milk to create a tender crumb. After rising, the dough is rolled out, spread with butter and a spiced mixture, rolled, sliced into individual rolls, and baked until golden. The icing added warm brings a sweet, tangy finish to these classic baked treats.

Description

These Homemade Cinnamon Rolls start with an active dry yeast dough combined with warm milk, sugar, butter, salt, eggs, and flour to form a slightly sticky dough. After an initial rise, the dough is rolled into a large rectangle, then spread with softened butter and a filling of brown sugar, cinnamon, and flour. The dough is then rolled up lengthwise and sliced into roughly 12 rolls placed on a pan to rise again.

The rolls bake at 375°F for about 15-20 minutes until golden brown. While baking, a frosting is prepared with butter, powdered sugar, cream cheese, vanilla extract, and salt. This icing is spread over the warm rolls, creating a moist and flavorful topping that complements the sweet cinnamon filling.

These rolls are soft and tender with a balanced sweetness and a slight tang from the cream cheese icing. They are best enjoyed fresh but can be stored both before and after baking with proper refrigeration or freezing methods.

You can prepare the rolls in advance by filling and rolling, then refrigerating overnight or freezing up to two months. Before baking, allow them to come to room temperature and rise again. After baking, store cooled rolls at room temperature for a few days or freeze for longer storage. Reheating can be done in the microwave or in a low oven to restore softness.

Ingredients

Servings

Rolls

  • 1 packet active dry yeast
  • 1 cup milk warm
  • ½ cup granulated sugar
  • cup butter softened
  • 1 teaspoon salt
  • 2 egg
  • 4 cups all-purpose flour

Filling

  • 1 cup brown sugar
  • tablespoons cinnamon
  • 2 tablespoons all-purpose flour
  • cup butter softened

Icing

  • ½ cup butter
  • cup powdered sugar
  • ¼ cup cream cheese
  • ½ teaspoon vanilla extract
  • teaspoon salt

Instructions

  1. In a large bowl, dissolve yeast in warm milk. Add sugar and 1 cup of flour. Stir gently, cover, and set aside until doubled in size, about 30-45 minutes.
  2. Add butter, salt, eggs, and remaining flour. Mix well with a wooden spoon.
  3. Turn dough onto a lightly floured surface and knead for 5 minutes (dough will be a little sticky) Place back in the bowl and cover to let rise until doubled in size.
  4. While the dough is rising, make the filling by combining brown sugar, cinnamon, and flour in a small bowl.
  5. Roll out onto a 21x16-inch rectangle, about ¼ inch thick.
  6. Spread the ⅓ cup softened butter then sprinkle with the cinnamon mixture. Roll up long ways and cut into 1¾-inch slices. You should get about 12 cinnamon rolls.
  7. Place on a greased jelly roll pan and let double in size.
  8. Bake at 375°F for 15-20 minutes.
  9. While the rolls are baking, whisk unsalted butter, powdered sugar, cream cheese, vanilla extract, salt together and spread over warm rolls

Notes

  • Unbaked rolls can be refrigerated overnight or frozen for 1-2 months before baking; bring to room temperature and let rise before baking.
  • Store baked rolls at room temperature covered for 3-4 days or freeze for 2-3 months.
  • Reheat individual rolls in the microwave or larger batches in a 300°F oven to warm.
