Homemade Cinnamon Rolls (swoon-worthy!)

These Homemade Cinnamon Rolls feature a yeast-leavened dough enriched with butter, milk, sugar, salt, and eggs. Rolled out thin, the dough is spread with a cinnamon sugar filling before being rolled up and cut into portions. After a rise, the rolls are baked and topped with a buttery vanilla icing for a soft, sweet treat with a tender crumb and classic cinnamon aroma.

Description

This recipe creates cinnamon rolls starting with a dough made from yeast, warm water, milk (sometimes buttermilk), melted butter, sugar, salt, egg, and all-purpose flour combined until firm yet slightly sticky. The dough is allowed to rise until doubled, then rolled into a rectangle. A filling of melted butter, brown and white sugar, and cinnamon is spread evenly before rolling the dough tightly and sealing the edges.

The dough is cut into portions and baked until golden and cooked through. The rolls are finished with a smooth icing made from butter, powdered sugar, vanilla, and a bit of liquid to achieve a creamy texture. The result is a soft, sweet pastry with the classic cinnamon sugar flavor and tender bite.

The recipe notes suggest using a stand mixer for dough preparation or a bread machine on a dough cycle, making the process adaptable for different kitchen setups.

Ingredients

Servings

Dough:

  • 2 ½ tsp yeast I have used less with perfect results, dry
  • 4 oz water (warmed to 105-115ºF)
  • cup sugar (plus ½ tsp)
  • 4 oz milk (warmed, I use buttermilk)
  • cup butter (melted)
  • 1 tsp salt
  • 1 egg (slightly beaten)
  • 4 cup all-purpose flour more or less to attain a firm, yet slightly sticky dough

Filling:

  • 2 oz butter (melted)
  • ½ cup brown sugar
  • 2 Tbsp sugar
  • 2 ½ tsp cinnamon

Icing:

  • 2 oz butter (good quality, like Lewis Road Creamery)
  • 1 ½ cups powdered sugar (confectioner's sugar)
  • ½ tsp vanilla
  • 1 Tbsp water (or milk)

Instructions

  1. Brush the inside of two 8" or 9" round pans or a 9" x 13" tray with melted butter.
  2. Stand mixer (or by hand) instructions: place the water, yeast and ½ teaspoon of sugar in a large mixing bowl and set aside. Combine the milk, ⅓ cup (66 grams) sugar, melted butter, salt and egg in another bowl or measuring jug. Stir this mixture well, then add to yeast and water in bowl.
  3. Add half the flour and beat until smooth, using the dough hook. Add the remaining flour until the dough is firm, but will be slightly sticky. Cover, and let rise until doubled in size.
  4. Punch down dough after it has risen and let rest for 5 minutes.
  5. Meanwhile, mix the cinnamon with the brown and white sugar in a small bowl.
  6. Roll out the dough with rolling pin into a 7" x 10" rectangle. Spread the melted butter on the dough, then sprinkle with the cinnamon sugar mixture, going almost to the edges. Roll the dough, starting from the longest edge (see below.) Pinch the edges to seal.
  7. Cut into quarters using plain dental floss, then cut each quarter into 3 equal pieces. Place into two 8" or 9" round buttered tins or a rectangular baking tray, and place in oven (unheated) for about half an hour or until doubled in size.
  8. Once risen, remove from the oven and preheat oven to 350ºF.
  9. When ready, place the rolls in the center of the oven and bake for 20 to 25 minutes.
  10. While the rolls are baking, make the icing.
  11. Mix all the icing ingredients together, until it has a smooth spreading consistency.
  12. The rolls will rise and be golden brown when ready. While still a little warm, spread with the icing.

Notes

  • Mix dough in a stand mixer for easier handling and consistent results.
  • If using a bread machine, add wet ingredients first, then flour, placing yeast in a center well and use the dough cycle.
