Homemade Corned Beef Hash Recipe

Homemade Corned Beef Hash combines diced cooked corned beef with seared potatoes, bell peppers, and onions in a skillet, cooked until browned and slightly crisp. It is typically served topped with fried eggs, making a hearty breakfast or brunch dish with savory, spicy notes and a satisfying texture contrast.

Description

This hash begins with sautéing diced potatoes seasoned with salt, garlic powder, and optional red pepper flakes in butter and olive oil over medium to medium-high heat until browned and crisp. Bell peppers, onion, and diced cooked corned beef are then added and cooked further to blend flavors and warm through.

The finished hash features a mix of crispy and tender potato pieces alongside the savory, slightly spicy corned beef and softened vegetables. Topping the dish with lightly fried eggs adds richness and moisture.

You can customize the seasoning by adding Cajun or blackening spices to the potatoes for extra flavor. Optionally, melting shredded cheddar over the finished hash adds a creamy cheese element.

Ingredients

Servings
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 3 potato peeled and diced into bite-sized pieces, medium yellow; 1 pound
  • 1 teaspoon garlic powder
  • 1 tablespoon red pepper flakes optional, for spicy
  • 1 bell pepper diced (use jalapenos for a touch of spiciness)
  • 1 onion diced, medium
  • 2 cups corned beef diced, cooked
  • 4 egg for serving, fried

Instructions

  1. Heat a cast iron pan to medium heat and add butter and olive oil. Melt and swirl.
  2. Increase heat to medium-high and add the potatoes. Sprinkle them with salt, garlic powder, and red pepper flakes. Cook them for 10 minutes, turning to get all sides, until they brown and start to crisp up to your liking.
  3. Reduce heat to medium and add peppers, onion and corned beef. Cook for 5 minutes.
  4. Top the gorgeous hash with 2 lightly fried eggs and serve with your favorite hot sauce on the side.

Notes

  • Enhance flavor by seasoning potatoes with Cajun or Blackening Seasoning blends before cooking.
  • For a cheesy variation, top the cooked hash with 1 cup shredded cheddar cheese, cover, and simmer 5 minutes to melt before serving.
