Description
This soup starts by melting unsalted butter and whisking in all-purpose flour, which is cooked until golden to develop a mild nutty flavor and form a roux that thickens liquids. Chicken broth and milk are then slowly added with constant whisking to avoid lumps, and the mixture is brought to a simmer until it coats the back of a spoon. Seasonings of garlic powder, onion powder, dried parsley, salt, and black pepper complete the base, providing a balanced and subtle savory taste.
The resulting soup is smooth and creamy with a light thickness, suitable for serving hot as a comforting soup or as a substitute in recipes requiring cream of chicken soup. It can be cooled and stored for future use as needed.
For storage, keep the soup in an airtight container in the refrigerator for up to 3 to 4 days. This recipe yields about 1 1/3 cups, similar to a standard 10.5-ounce can.
Ingredients
- 1/4 cup butter unsalted
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup milk whole
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon parsley dried
- 1/2 teaspoon salt or to taste

Instructions
- Melt butter in a saucepan over low heat. Add in flour and increase heat to medium. Whisk together and let cook for 2 minutes. The butter and flour mixture will become more golden and smell a bit nutty.
- Slowly pour in chicken broth and milk, whisking continously to combine.
- Bring to a simmer and whisk constantly while it heats. Just as it comes to a simmer, it will thicken up and should be just thick enough to coat the back of a spoon.
- Season by stirring in garlic powder, onion powder, parsley, salt and pepper to taste.
Notes
- Serve the soup hot, or cool and store for up to 4 days in an airtight container.
