Description

This soup starts by melting unsalted butter and whisking in all-purpose flour, which is cooked until golden to develop a mild nutty flavor and form a roux that thickens liquids. Chicken broth and milk are then slowly added with constant whisking to avoid lumps, and the mixture is brought to a simmer until it coats the back of a spoon. Seasonings of garlic powder, onion powder, dried parsley, salt, and black pepper complete the base, providing a balanced and subtle savory taste.

  • 1/4 cup butter unsalted
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk whole
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon parsley dried
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste

Instructions

  1. Melt butter in a saucepan over low heat. Add in flour and increase heat to medium. Whisk together and let cook for 2 minutes. The butter and flour mixture will become more golden and smell a bit nutty.
  2. Slowly pour in chicken broth and milk, whisking continously to combine.
  3. Bring to a simmer and whisk constantly while it heats. Just as it comes to a simmer, it will thicken up and should be just thick enough to coat the back of a spoon.
  4. Season by stirring in garlic powder, onion powder, parsley, salt and pepper to taste.

Notes

  • Serve the soup hot, or cool and store for up to 4 days in an airtight container.
  • This homemade version replaces canned cream of chicken soup and measures about 1 1/3 cups per recipe.
