Homemade Dinner Rolls

Homemade Dinner Rolls with yeast, sugar, honey, and butter create soft, tender bread rolls with a slightly sweet flavor. The dough is kneaded until smooth, allowed to rise until doubled, then shaped into round rolls and baked until lightly golden. Brushed with a butter-honey mixture after baking, these rolls gain a glossy, soft crust with a hint of sweetness.

Description

This recipe for dinner rolls starts with combining flour, sugar, yeast, salt, warm water, and butter to form a soft dough. Kneading develops gluten for a light, tender crumb. After resting briefly, the dough is divided into 12 to 14 balls shaped with smooth tops and placed close together for a gently pull-apart texture.

The rolls rise a second time, doubling in size, then bake at 375°F until lightly browned. Brushing with butter mixed with honey just after baking adds flavor and moisture to the crust, resulting in a shiny, slightly sweet finish.

These rolls are suitable for serving as a bread side, dinner accompaniment, or sandwich base. Their soft texture and mild sweetness complement many meals.

The recipe is adapted by omitting cheese and adjusting salt and butter flavoring for a more classic roll.

Ingredients

Servings
  • 2 to 2-1/2 to 2-1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 package 1/4 ounce quick-rise yeast (instant yeast not active dry)
  • 3/4 /4 teaspoon salt
  • 3/4 /4 cup water warm
  • 2 tablespoons plus 1 tablespoon more for buttering after baking
  • 2 teaspoons honey

Instructions

  1. In a large bowl, combine 1-1/2 cups flour, sugar, yeast and salt. Add warm water and 2 tablespoons butter; beat on medium speed for 3 minutes or until smooth. Stir in just enough remaining flour to form a soft dough (about 1/2 to 1 cup more). The dough will start to come away from the sides of the bowl when you have enough flour. Do not add too much flour or they will be dry.
  2. Using a stand mixer, knead for about 4-6 minutes or until smooth. You can also knead on a floured surface by hand if you don't have a stand mixer. Cover and let rest for 10 minutes. Divide into 12-14 pieces. Shape each into a smooth ball pulling the tops of the ball down to the bottom and pinching. Place in a greased 9-inch round or square baking pan, or even a pie plate. Cover and let rise in a warm place until doubled, about 30 minutes.
  3. Preheat oven to 375°. Bake rolls 11-14 minutes or until lightly browned. Melt remaining 1 tablespoon of butter in a small ramekin and stir in the honey. Brush over rolls.

Notes

  • Knead the dough until smooth but avoid adding too much flour to keep rolls soft.
  • Allow the rolls to rise in a warm spot until doubled for proper texture.
  • Brush rolls with a butter and honey mixture immediately after baking for a sweet, shiny crust.
