Homemade Enchilada Sauce
Description
This enlivened enchilada sauce starts with a pan roux of vegetable oil and flour cooked briefly before adding a mix of chili powder, garlic powder, onion powder, cumin, oregano, smoked paprika, sugar, and salt to build depth. Chicken broth and tomato sauce are gradually whisked in to create a uniform, smooth sauce. Simmering for about 10 minutes thickens the sauce to a consistency that clings well to enchiladas without overpowering them.
The sauce’s spice blend contributes smoky and aromatic notes, while the roux lends body and a gentle richness. It can be used immediately or cooled and refrigerated or frozen for later use, maintaining its flavor and texture.
This sauce is a foundational component for enchiladas but can also complement other Mexican dishes needing a flavorful red sauce.
