Description
This Homemade Granola formula starts with whole rolled oats combined with dried coconut flakes, almonds, sunflower seeds, flax seeds, and sesame seeds. A syrup made from honey and melted coconut oil is boiled briefly and mixed with almond extract, then poured over the dry ingredients to evenly coat them. The coated granola is spread on a baking sheet and toasted at 325°F while stirred periodically to prevent burning and ensure even browning.
The resulting granola is crunchy with tender bits from the toasted nuts and seeds and a subtle coconut and almond aroma. Adding dried fruits such as raisins, apricots, or cranberries after cooling contributes bursts of sweetness and chewy contrast within the crunchy clusters.
This mix can be stored in an airtight container for about one week and served with fresh berries and milk for breakfast or as a snack. It offers control over ingredients compared to commercial granolas, allowing adjustment of nuts, seeds, and fruits used.
Ingredients
- 4 cups whole rolled oats not quick or instant, traditional, raw
- 3/4 cup dried flaked coconut unsweetened
- 1/3 cup almonds chopped or sliced
- 3 tablespoons sunflower seeds , unsalted (can use raw or roasted)
- 1 tablespoon flax seeds
- 1 tablespoon sesame seeds
- 1/3 cup honey raw
- 3 tablespoons coconut oil extra virgin, or olive oil
- 1/2 teaspoon almond extract
- 1 cup dried fruit e.g., apricots, raisins, cranberries, cherries, pineapple, dates, etc, assorted
Instructions
- Preheat the oven to 325 degrees F.Place the oats in a large mixing bowl. Add the coconut flakes, nuts and seeds and stir to combine.Place the honey and coconut oil in a small saucepan and bring to a boil. Boil for one minute and remove from heat. Stir in almond extract if using.Pour honey mixture over the oat mixture and stir until coated.Spread the granola out on a large baking sheet. Bake for 20-25 minutes or until lightly toasted, stirring every few minutes to prevent burning. Let the granola cool completely then add the dried fruits and stir to combine.Store in an airtight container. Keeps for about a week. Serve with milk and fresh berries if desired.
