Homemade Granola Bars
Description
The granola bars start by melting butter with brown sugar and light corn syrup (or honey), cooking it briefly to dissolve the sugar without overcooking. This syrup mixture binds the puffed rice cereal and granola cereal together to form a cohesive base. After stirring in chocolate chips and transferring the mixture to a prepared pan, the bars are pressed flat and cooled at room temperature to set.
The result is a treat with a balanced crunch from the cereals and pockets of chocolate sweetness. The bars hold together well, suitable for an on-the-go snack. The recipe is adaptable to include additions such as nuts, raisins, or alternative flavored chips depending on preference.
Once cooled and cut, store bars in an airtight container separated by wax paper to keep their shape and freshness. These bars can be tailored to personal tastes by varying ingredients and mix-ins.
Ingredients
- 1 butter stick
- ½ cup brown sugar
- ½ cup light corn syrup you can also use honey
- 2 cups Rice Krispies cereal
- 3 cups granola I used Cascadian Farm granola cereal
- 1 cup chocolate chips
Instructions
- Line an 9x13" baking dish with wax paper. Spray with non-stick cooking spray and set aside.
- In a large saucepan over medium heat, combine butter, brown sugar and Karo syrup.
- Bring to a boil. Reduce heat to low-medium and simmer until all of the sugar is dissolved, about 2 minutes. NOTE: Do not over cook this mixture! Set a timer.
- Remove from heat and stir in Rice Krispies cereal and granola until well combined.
- Pour cereal mixture into prepared pan and spread evenly with a scraper.
- Gently press the chocolate chips in with your scraper.
- Let sit at room temperature for 20-30 minutes. Cut into desired size.
- Store in an air tight container, separated with wax paper.
Notes
- Add chopped nuts, raisins, white chocolate chips, or peanut butter chips to vary flavors and textures.
- Press the mixture evenly into the pan to ensure uniform thickness and easy cutting.
- Store granola bars in an airtight container with wax paper between layers to keep them from sticking.
