This Homemade Grape Soda begins with simmering Concord grapes in water along with juice from half a lemon. The grapes soften and release their juice after about 20 minutes of simmering, during which they are mashed to break the skins. The mixture is then blended thoroughly to puree all the grapes into a smooth liquid.

The puree is passed through a fine mesh strainer to separate juice from pulp, seeds, and skins, resulting in a smooth grape syrup. This syrup is chilled before serving. To make the soda, the grape syrup is mixed in equal parts with sparkling water and poured over ice. A fresh herb such as mint or basil may garnish the drink, adding a subtle aromatic note.

This method yields a fresh, vibrant grape soda that captures the natural flavor of the grapes without artificial additives or preservatives. The lemon juice adds brightness to balance the grape's sweetness, making it refreshing and mildly tart.

  • 1 lb concord grapes or another black grape that you like, taste first!, fresh
  • 1/2 cup water
  • lemon juice of half

Instructions

  1. Wash the grapes and put them in a heavy bottomed pot, along with the water and lemon juice. Bring the pot to a simmer and continue simmering for about 20 minutes until the grapes have begun to soften. Smash the grapes with the back of a large spoon as they cook.
  2. Transfer the mixture to a food processor and process until completely blended. Let the machine run long enough to get all the grapes completely pureed.
  3. Pass the puree through a mesh strainer, pushing lightly, to get the juice through. Discard any pulp, skin or seeds.
  4. Refrigerate the grape syrup until cold.
  5. To serve, fill a glass with ice and mix half syrup and half sparking water. Garnish with a sprig of basil or mint.
