Homemade Hamburger Buns

These Homemade Hamburger Buns are made with a yeast dough enriched with milk, butter, and sugar, producing soft, slightly sweet buns with a tender crumb. The dough is allowed to rise until doubled, then shaped into discs, brushed with an egg wash for a shiny finish, and optionally topped with sesame seeds before baking to a light golden brown. The result is a classic bun suitable for burgers or sandwiches.

Description

The recipe for Homemade Hamburger Buns begins by activating yeast in warm milk and water combined with sugar and salt. Melted butter is mixed with the base liquid, then all-purpose flour is added gradually to form a smooth, pliable dough. The dough is allowed to rise in a greased bowl until doubled in size, which develops flavor and structure.

After the first rise, the dough is divided into 12 portions, shaped into balls, and pressed slightly into discs. An egg wash made of beaten egg and water is brushed on top to give the buns a glossy appearance. Sesame seeds may be sprinkled for added texture and flavor. Baking at 400 degrees Fahrenheit for about 12 minutes produces buns with a soft interior and a light golden crust.

These buns are versatile and can be used for a variety of sandwiches or burgers. The texture is sturdy enough to hold fillings without crumbling but remains soft and slightly sweet, complementing savory toppings.

Ingredients

Servings
  • 2 1/2 teaspoons instant dry yeast
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons salt
  • 1 cup milk warm
  • 1/2 cup water warm
  • 1/4 cup butter melted, salted
  • 4 1/2 cups all-purpose flour
  • 1 egg
  • 1 tablespoon water
  • 1 tablespoon sesame seeds optional

Instructions

  1. In a large mixing bowl, or in the bowl of a stand mixer, combine the yeast, sugar, salt, milk, and water.
  2. Add in the melted butter and 3 1/2 cups of the flour. Begin mixing on a low speed until all of the flour is stirred in. Slowly add in the remaining flour 1/2 cup at a time until the dough is tacky, but doesn't stick to your hands. The dough should be nice and smooth.
  3. Transfer to a lightly greased large mixing bowl and let rise until double in size, about 1 hour.
  4. Divide the dough into 12 equal portions and roll into balls. Press each ball between your hands to flatten. The dough will spring back a bit giving you about a 1/2-inch disc. Place the disc onto a lightly greased baking sheet.
  5. Whisk together the egg and 1 tablespoon water to form an egg wash. Brush the tops of the discs. This will give them a nice shiny brown finish. Sprinkle sesame seeds on top, if desired, to make sesame seed buns.
  6. Bake in a 400 degree oven for about 12 minutes, until lightly browned.
