Homemade Hamburger Helper (One Pot)
Description
The recipe starts by browning 85% lean ground beef in a skillet, then seasoning it with garlic powder, onion powder, Italian seasoning, and salt. Tomato paste is added to deepen flavor and create a base for the sauce. Chicken broth and milk are poured in to provide the cooking liquid for the elbow pasta, which is stirred in uncooked. The mixture is brought to a boil, then simmered with a lid to cook the pasta al dente.
Once the pasta is tender, shredded cheddar cheese is stirred in off heat to melt into a gooey, creamy finish. The result is a filling, cheesy skillet meal reminiscent of traditional boxed Hamburger Helper but made from scratch. This dish offers convenience by cooking everything in one pot with simple ingredients.
The balance of seasonings, liquid, and cheese yields a tender pasta and deeply flavored beef mixture suited for casual dinners and family meals.
Ingredients
- 1 lb ground beef 85% or leaner
- 1 tsp garlic powder
- 2 tsp onion powder
- 1 tsp Italian seasoning
- 1 tsp salt
- 3 tbsp tomato paste
- 2 1/2 cups chicken broth
- 1 cup milk
- 2 cups elbow pasta uncooked
- 2 cups cheddar cheese freshly shredded
Instructions
- Heat a large skillet or pot over medium-high heat. Add the ground beef and break it up, cooking until no longer pink.
- Sprinkle in the garlic powder, onion powder, Italian seasoning, and salt. Add the tomato paste and mix it all together.
- Pour in the broth and milk, then add the pasta. Bring the soup to a boil while stirring often and scraping the bottom of the pan to prevent sticking.
- Turn the heat down to low, cover the pot, and allow to simmer for 8-10 minutes, or until the pasta is al dente.
- Once the pasta is cooked, turn off the heat and add the shredded cheddar. Stir until the cheese is melted and gooey. Enjoy!
