Description
This hot chocolate recipe starts by whisking cocoa powder, granulated sugar, salt, and water in a saucepan, bringing it to a boil while stirring to evenly combine and develop a smooth cocoa mixture. After simmering briefly to meld flavors, milk and vanilla extract are added and heated until warm but not boiling.
The combination of natural and Dutch-process cocoa powders balances the chocolate’s richness and sweetness. Using both types brings depth without bitterness. The texture is creamy and smooth with a balanced sweetness and chocolate intensity suitable for sipping.
The hot chocolate can be served immediately with additional half and half or milk to adjust the creaminess and temperature. Alternatively, it can be kept warm for hours in a slow cooker on a low or warm setting, making it practical for gatherings.
Variations include adding peppermint oil or extract for a seasonal twist. Almond or other non-dairy milks can be used as a substitute for a different milk base.
Ingredients
- ⅔ cup natural unsweetened cocoa powder or Dutch-process cocoa powder
- 1 ⅓ cups granulated sugar
- ⅛ teaspoon salt
- ⅔ cup water
- 6 cups milk dairy milk or non-dairy milk, like almond milk
- 1 teaspoon vanilla extract

Instructions
- In a 4-quart saucepan, whisk together the cocoa powder, sugar, salt and water. Stirring constantly, bring this mixture to a boil. Simmer for 2-3 minutes, moderating heat, if needed, so it doesn't burn.
- Stir in the milk and vanilla and heat until very warm without boiling or simmering. Serve immediately with additional half and half or milk to cool down the hot chocolate and add extra creaminess OR transfer the hot chocolate to a slow cooker and keep warm (warm or low setting) for several hours.
Notes
- Use a mix of natural unsweetened and Dutch-process cocoa powders to achieve a richer chocolate flavor.
- If your cocoa powder has lumps, sifting it before use helps create a smooth hot chocolate.
- Almond milk, especially dark chocolate almond milk, works well as a dairy substitute and adds unique flavor.
