Ingredients

Servings
  • 1 ounce dried chile de árbol
  • 2 cups water boiling
  • cup onion chopped
  • 2 garlic cloves
  • ¼ cup tomato sauce
  • 1 tablespoon brown sugar
  • ¼ teaspoon cumin
  • 1 teaspoon chili powder
  • cup white wine vinegar
  • 1 pinch kosher salt

Instructions

  1. Note: REMEMBER TO WEAR GLOVES WHILE HANDLING PEPPERS!
  2. Remove the stems from 1 ounce dried chile de arbol and add them to a medium bowl. Pour 2 cups boiling water over the peppers and let them steep for a few minutes until they have been rehydrated.
  3. Add the peppers and water to a blender or food processor and blend until the peppers are fully pureed.
  4. Add the ⅓ cup chopped onion, 2 garlic cloves, ¼ cup tomato sauce, 1 tablespoon brown sugar, ¼ teaspoon cumin, 1 teaspoon chili powder, ⅓ cup white wine vinegar, and 1 pinch kosher salt to the blender and blend until pureed.
  5. Pour the mixture into a medium saucepan and bring to a boil over high heat. Once it is boiling, reduce the heat to medium-low and simmer for 20 minutes.
  6. Remove from the heat and strain the mixture through cheesecloth before adding it to a sterilized bottle for storing.
