Description
This recipe combines cornmeal, flour, eggs, salt, baking soda, diced yellow onion, and buttermilk to form a thick batter. The batter consistency is adjusted with more buttermilk or flour as needed. Using two spoons, tablespoon-sized portions of batter are dropped into cooking oil heated to 350°F and fried until golden brown and cooked through, about five minutes, turning to brown all sides.
The resulting hush puppies have a crunchy exterior with a soft, airy inside that carries the subtle sweetness of cornmeal and the sharpness of onion. They are served hot and can be accompanied by sauces.
These hush puppies store well refrigerated for up to four days and can be frozen for three months. To maintain texture, reheat in the oven or microwave. Variations include adding garlic, peppers, or other Cajun seasonings. Using peanut oil is recommended for frying. Keeping hush puppies moving during frying ensures even browning.
Ingredients
- 3 cups cornmeal
- 1 ½ cups flour
- 2 egg
- 1 teaspoon salt
- ½ teaspoon baking soda
- 1/2 yellow onion peeled and small diced
- 3 cups buttermilk
Instructions
- Heat a medium-size pot with cooking oil to 350°.
- Add all of the ingredients to a large bowl and mix using a spoon or whisk until completely combined and smooth. If the batter is dry add more buttermilk and if it’s too wet, add some more flour. The batter should be thick.
- Using two spoons take about a tablespoon to a tablespoon and a half of batter and push it into the hot oil using the other spoon. The hush puppy should come to the top of the oil within a few seconds, then cook for a total of about 5 minutes or until browned on all sides and cooked throughout.
- Remove the hush puppies and drain them on paper towels to rid of any excess oil.
- Serve with your favorite sauce.

- Serve hush puppies immediately after frying or keep warm in a 200°F oven on parchment for up to 30 minutes; avoid long warming to prevent dryness.
- Reheat leftovers in the oven at 350°F for 4-6 minutes or until warm to maintain texture; microwave heating is also possible but may soften the crust.
- Store refrigerated for up to 4 days or freeze covered for up to 3 months for longer storage.
- Additional ingredients like garlic, spicy or bell peppers, and Cajun seasonings can be added for different flavors.
