Homemade Key Lime Larabar Balls

These Homemade Key Lime Larabar Balls blend dates, almonds, walnuts, and shredded coconut with fresh lime juice for a tangy, chewy snack. Pulsed to a chunky texture and chilled, they provide portable energy with a citrus twist. Storing them chilled helps maintain their shape and freshness.

Description

Homemade Key Lime Larabar Balls are made by processing dates, raw unsalted almonds and walnuts, shredded sweetened coconut, and lime juice together until a textured dough forms. The mixture is pulsed until reaching a slightly chunky consistency, then rolled into balls and chilled for 10-20 minutes to firm up.

The lime juice adds a bright citrus note contrasting the natural sweetness and nuttiness. The shredded coconut adds texture and a subtle tropical flavor, while the blend of nuts provides healthy fats and chewiness. Because they are made without preservatives, refrigeration and tight wrapping help maintain freshness for 3-4 days, though best consumed within a day for optimal texture.

These bars can be enjoyed cold or brought to room temperature before eating depending on personal preference. They offer a nutrient-dense, handheld snack suitable for on-the-go energy.

Ingredients

Servings
  • ½ cup dates
  • ¼ cup almond raw unsalted
  • 1-2 TBSP walnuts raw, unsalted
  • ¼ cup lime juice
  • 2-3 TBSP shredded coconut sweetened

Instructions

  1. Toss everything in your food processor and pulse.
  2. You might need to push the mixture off the sides of the processor and towards the blades once or twice. No biggie!
  3. Just pulse to your desired texture [I like them a little bit chunky] and roll into balls.
  4. Place your balls on a plate, cover with saran wrap and give them about 10-20 minutes in the fridge and they're good to go!
  5. Wrap them in saran wrap and snack on the go, or simply devour the entire batch in the name of food science and experimentation. Guess which one I did ;)
  6. Store saran wrapped in your fridge for up to 3-4 day, though I haven't been able to get them to last more than 12 hours.
  7. Enjoy cold or allow them to reach room temperature before snacking, whichever floats your boat! <3
