This Homemade Lychee Syrup combines peeled lychees with a simple sugar and water base to create a fragrant, lightly sweet syrup. The lychees release their juices while simmering, infusing the syrup with delicate fruity notes. After reducing to a syrupy consistency, it is cooled and strained to separate the infused liquid, ready to enhance drinks or desserts.

Homemade Lychee Syrup blends fresh or canned peeled lychees with water and granulated sugar, simmered until the mixture thickens to a consistency similar to maple syrup. Simmering the lychees releases their distinctive floral and tropical flavors into the syrup. After simmering and cooling, the syrup is strained to capture the pure lychee essence without any solids. The resulting syrup has a balance of fruity sweetness and subtle tartness from the original lychee fruit.

This syrup can be used as a flavoring agent in beverages or desserts, adding a fruity tropical note. The syrup should be kept in the refrigerator and consumed within a week for optimal freshness.

  • 125 ml water
  • 100 g granulated sugar
  • 12 lychees peeled (or canned, fresh

Instructions

  1. To a small saucepan, add the water and sugar.
  2. Heat over medium heat and bring the mixture to a simmer.
  3. Add in the lychees and give it a stir, pressing lightly on the fruit. (Note: lychees will release additional liquid).
  4. Let the syrup reduce and thicken, stirring occasionally, until it can lightly coat the back of a spoon (with a consistency similar to maple syrup).
  5. Pour the syrup along with the lychees into a jar, and let cool.
  6. Once cool, place the syrup into the fridge for 1 hour to let the flavour from the lychees permeate the syrup.
  7. Pour the cooled lychee syrup through a sieve into a clean glass jar (press lightly on the lychees to extract their juice). Use a funnel if transferring into a small opening. (You can discard the lychees, or eat them -- however, they may be a little sweet. I like throwing them into a smoothie).
  8. Use as you would in flavouring drinks or desserts.
  9. Store the syrup in the fridge for up to 1 week.
