Description
The recipe begins by whisking the egg yolk and lemon juice together until frothy, which helps initiate the emulsion. Neutral oil is then very slowly added in a thin stream while whisking vigorously to incorporate the oil evenly, preventing the mixture from breaking. Salt is added to enhance flavor. The resulting mayonnaise is thick and creamy with a fresh lemon tang.
This method requires patience during oil incorporation to achieve the proper texture and consistency. Using room temperature ingredients helps the emulsion form reliably.
The finished mayonnaise can be used immediately or stored refrigerated. If the initial emulsion breaks, whisking vigorously or adding a teaspoon of warm water gradually can help restore it.
Ingredients
- 1 large egg at room temperature, yolk
- 1 tablespoon lemon juice
- 1 cup neutral-flavored oil I like avocado oil
- ¼ - ½ teaspoon salt to taste, sea salt
Instructions
- Place the egg yolk in a medium-sized bowl. Add the lemon juice and whisk until frothy.
- Very slowly, begin adding the oil in a thin stream while whisking continuously. If the oil starts to build up at all, stop pouring and whisk vigorously until it is incorporated. Continue adding the oil while whisking until all the oil has been used.
- Whisk ¼ teaspoon of salt into the mayo. Taste and add more if needed.
Notes
- If the egg is cold, warm it by placing in a cup of hot tap water for 5 minutes before starting the recipe to improve emulsification.
