Homemade Meatloaf
Description
This Homemade Meatloaf starts by gently sautéing chopped carrots, celery, and white onion in butter until soft, then seasoning lightly with salt. Ground chuck is mixed with beaten eggs, milk, the cooked vegetables, and seasoned Italian bread crumbs to give structure and flavor. Additional salt and black pepper are blended into the mixture before shaping it into a loaf in a greased pan. Baking at 350 degrees for 60 minutes cooks the meat while maintaining moisture. A final layer of ketchup spread on top and baked for 15 more minutes caramelizes into a flavorful glaze, adding a slightly sweet and tangy contrast to the savory meat.
The texture balances tender meat with soft, cooked vegetables dispersed throughout. The ketchup topping creates a glazed finish that helps keep the loaf moist and adds an appealing appearance. As a classic comfort food, this meatloaf can be served alongside mashed potatoes, steamed vegetables, or a simple salad for a filling family dinner.
Ingredients
- 1/2 cup carrot chopped
- 1/2 cup celery chopped
- 1/2 cup onion chopped; white
- 2 tablespoons butter
- 1/2 teaspoon salt
- 2 pounds ground chuck beef
- 2 large egg beaten
- 1 cup bread crumbs Italian seasoned
- 3/4 cup milk
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 cup ketchup
Instructions
- Preheat oven to 350 degrees. Saute vegetables in butter over medium heat. Add 1/2 teaspoon of salt to the vegetables. When the onions are translucent and the remaining vegetables are soft turn off the heat. Combine in a bowl ground chuck, 2 beaten eggs, milk, vegetables, and seasoned bread crumbs to the bowl. Stir to mix well. Add salt and pepper to meatloaf mixture and blend seasonings in well. Pat meatloaf into a greased loaf pan. Bake for 60 minutes. Remove meatloaf from oven. Add ketchup to the top of the meatloaf and spread out evenly. Bake for another 15 minutes so the ketchup caramelizes on the top.
