Homemade Nutter Butter Cookies
Description
The cookie dough is prepared by creaming together butter, brown sugar, and peanut butter, then adding egg and vanilla before folding in the dry ingredients of flour, baking soda, and salt. Shaping the dough into small logs rolled in sugar creates the peanut shape and adds a slight crunch to the exterior once baked. Baking at 350°F for 10–12 minutes produces cookies that are just lightly browned on the edges while remaining soft inside.
The peanut butter filling is a smooth blend of butter, peanut butter, powdered sugar, milk, and vanilla, beaten to a fluffy texture. Once the cookies have cooled, the filling is sandwiched between pairs to complete the iconic treat, delivering a creamy, sweet contrast to the cookie's slightly chewy texture.
These cookies serve well as a snack or dessert and bring the nostalgic flavors of Nutter Butter cookies to a homemade form, allowing control over ingredients and freshness.
