Description

Homemade Paleo Protein Bars are made by blending egg white protein powder, coconut flour, and a pinch of sea salt, then mixing in warmed almond butter and honey with vanilla extract and almond milk to form a thick dough. The mixture is spread into a pan, chilled, and topped with mini dairy-free chocolate chips before slicing into bars. The result is a firm but tender bar with a mild sweetness and a hint of almond flavor from the butter. These bars are ideal for on-the-go snacking or post-workout nutrition and maintain their shape well even at room temperature.

The texture balances chewiness from the protein and coconut flour with a smooth almond butter richness. The chilling step firms the bars, while the chocolate chips add scattered pockets of chocolate flavor and a slight crunch. They do not require baking, simplifying preparation.

  • 1 1/3 Cup egg white protein unflavored, natural
  • 2/3 Cup coconut flour (70g)
  • sea salt pinch
  • 3/4 Cup almond butter natural
  • 2/3 Cup honey
  • 1 Tbsp vanilla extract
  • 1/4 Cup almond milk unsweetened vanilla
  • 2 Tbsp chocolate chips mini, dairy-free

Instructions

  1. Line an 8x8 inch pan with parchment paper, leaving an overhang to use as a handle to remove the bars. 
  2. In a large bowl, whisk together the protein, coconut flour and salt.
  3. In a medium, microwave-safe bowl, melt the the almond butter and honey until smooth, about 1 minute.  Add the vanilla extract and then whisk it all together until creamy.
  4. Add the almond butter mixture into the protein mixture, along with the almond milk.  Mix until well incorporated and you have a somewhat dry, thick dough.  It can be easier to use your hands to mix at the end.
  5. Spread into the prepared pan and place in the fridge for 10 minutes to cool. Then, press in the chocolate chips.
  6. Let refrigerate for at least 1 hour, then slice into bars and DEVOUR!

Notes

  • Ensure the protein powder used contains only egg whites for best results; other protein types may change texture.
  • Store bars in the refrigerator to keep them firm, though they will also hold shape at room temperature temporarily.
