Homemade Piloncillo Syrup is a sweet, dark syrup made by dissolving piloncillo cones with water and optionally cinnamon. It yields a thick, flavorful syrup used to sweeten drinks or desserts. The syrup brings a rich, molasses-like taste characteristic of piloncillo, enhanced by warm cinnamon when included.

Description

To prepare Homemade Piloncillo Syrup, piloncillo cones are broken down in water over medium heat until fully dissolved. Adding a small cinnamon stick imparts subtle spiced notes. After dissolving, the mixture simmers gently to thicken into a syrup that drips slowly off a spatula. The process can be expedited by microwaving the piloncillo cone to soften it prior to cutting.

The syrup has a deep amber color and rich, caramel-like flavor originating from the unrefined sugar. It serves well as a sweetener in beverages, baking, or drizzling over foods.

The syrup should be stored in an airtight container refrigerated for up to three to four weeks. Reheating slightly before use helps restore a pourable consistency. Its concentrated sweetness and convenience make it a practical pantry item for recipes requiring piloncillo.

  • 1 ounce piloncillo cone form
  • cup water
  • 1 cinnamon stick Optional, small

Instructions

  1. In a heavy-bottomed small saucepan, over medium heat, add the piloncillo, water and cinnamon if using.
  2. Stir constantly while breaking down the cone with a wooden spoon or spatula.
  3. Once the cone dissolves, turn down the heat and let the syrup simmer steadily until it becomes a slightly slightly thick syrup that drips off your spatula slowly. About two minutes.
  4. Note: if you want to speed up the melting process, or only want to make half of a cone, microwave the cone for about 30 seconds to soften it up. This will make it easy to cut with a knife right where you want to.

Notes

  • Store the syrup in a sealed container in the refrigerator for up to 3 to 4 weeks.
  • Reheat syrup gently in the microwave for about 15 seconds at a time to restore pourability before use.
  • Microwaving the piloncillo cone briefly before melting can make cutting and dissolving easier.
