Homemade Pimento Cheese

  • 1 (4 ounce) Pimentos not drained, diced, jarred
  • 1 pound cheddar cheese grated, sharp
  • 1 cup mayonnaise
  • kosher salt to taste
  • ground black pepper to taste

Instructions

  1. Place the cheese in a mixing bowl.
  2. In a separate bowl, combine diced pimentos (with their juice) and mayonnaise.
  3. Add to the cheese, toss to combine, and season with salt and pepper.
  4. Serve as a dip with fresh vegetables, spread on bread as a sandwich, or on top of crackers.

Notes

  • This recipe yields about 3 1/2 cups of pimento cheese.
  • If you're preparing pimento cheese sandwiches, you'll need approximately ⅓ - ½ cup of the cheese spread per sandwich.
