  • 1 tablespoon vegetable oil
  • ½ cup white onion , chopped
  • 2 chipotle peppers in adobo sauce , roughly chopped
  • 1 garlic minced, clove
  • 1 ½ cups tomato sauce plain
  • ½ cup chicken broth
  • ½ teaspoon kosher salt coarse
  • ½ teaspoon paprika
  • 1 teaspoon oregano dried
  • ½ teaspoon chili powder
  • 2 tablespoons lime juice fresh

Instructions

  1. Heat the oil in a medium saucepan over medium heat.
  2. Add white onion, chipotle peppers in adobo sauce and garlic. Cook until soft and fragrant, about 5 minutes.
  3. Add tomato sauce, chicken broth, Kosher salt, smoked paprika, dried oregano, chili powder and lime juice, stirring to combine. Simmer on low for 5 minutes.
  4. Using an immersion blender, or transferring the whole mixture to a stand blender or food processor, blend until smooth.
  5. Set aside until ready to use.
