  • 2 cups beans Use black beans, pinto beans, or bayo beans with a little cooking liquid, cooked
  • ½ cup white onion finely chopped
  • 1 garlic finely chopped, clove
  • 2 tbsp. neutral cooking oil regular or olive oil, generic cooking oil
  • black pepper a pinch
  • salt ½ tsp. plus to taste

Instructions

  1. Chop the onion. Finely chop the garlic.
  2. In a medium-sized pan, heat the oil to medium and add the chopped onion. Cook until the onion becomes transparent.
  3. Add the chopped garlic and cook for 1 minute. Do not allow the garlic to brown which will give it a bitter taste.
  4. Add the cooked beans with a little bit of the cooking water plus the salt and pepper.
  5. Cook for 2 minutes before mashing.
  6. Mash the beans to the consistency you prefer.
  7. Cook for 5 minutes stirring continually.
  8. Turn off the heat and allow the beans to rest for 3 minutes before serving.

Notes

  • Store refried beans in an airtight container in the refrigerator for 3 to 5 days.
  • Reheat gently in a pan over low heat, adding water if the beans become dry; microwave reheating is also convenient.
