Homemade Refrigerator Pickles Recipe
Description
This recipe brings together sliced pickling cucumbers, Vidalia onions, and fresh dill sprigs packed into a pint jar. The pickling liquid is prepared by warming apple cider vinegar, water, smashed garlic, and whole spices including black peppercorns, yellow mustard seed, and red pepper flakes until salt and sugar dissolve. Once cooled to warm, the brine covers the packed jar ingredients, which are then sealed and refrigerated.
The resulting pickles are crisp and pleasantly tangy, balancing bright vinegar acidity with aromatic spices. The slices retain a firm texture from the quick refrigeration process and take on a herbaceous note from the dill and small heat from pepper flakes.
These refrigerator pickles are convenient for quick pickling needs without long fermentation. They pair well with sandwiches, burgers, or as a snack. Adjusting sugar can tailor the tartness; adding up to 1 1/2 teaspoons per jar can mellow vinegar’s sharpness if preferred.
Ingredients
- 3 cucumber each about 4 inches in length, sliced evenly, pickling
- 1/4 cup onion sliced, Vidalia
- 3-5 prigs dill weed fresh
- 1/2 cup apple cider vinegar
- 1/2 cup water
- 2 cloves garlic smashed
- 1 1/2 teaspoons salt or kosher salt, pickling
- 1/4 teaspoon granulated sugar
- 1/4 teaspoon black peppercorns whole
- 1/4 teaspoon mustard seed whole, yellow variety
- Pinch red pepper flakes crushed
Instructions
- Pack a clean pint-sized jar with sliced cucumbers, onion slices, and dill sprigs. Leave a 1/2 inch of space at the top of the jar for liquid.
- In a small pot heat the vinegar, water, garlic, and all spices until the mixture comes to a simmer and salt and sugar dissolve.
- Cool the brine down to warm and fill the jar so everything is covered with brine.
- Close the lid tightly and refrigerate for 24 hours before eating.
Notes
- This recipe makes one pint jar. Scale ingredients proportionally for additional jars.
- Adjust sugar levels to soften acidity; up to 1 1/2 teaspoons added sugar per jar can reduce tartness.
