Homemade Rice-A-Roni

Homemade Rice-A-Roni mixes broken spaghetti pieces with long grain white rice, browned in butter before simmering in seasoned chicken broth. Optional diced tomatoes add color and brightness. The dish is aromatic with garlic and onion powders, with a tender rice and pasta texture finished by chopped parsley. It’s a versatile side dish complementing many meals.

Description

This recipe recreates Rice-A-Roni by combining broken spaghetti or vermicelli pasta with long grain white rice, which are first browned in butter to develop a nutty flavor and slight crunch. Chicken broth is then added along with seasonings including salt, garlic powder, onion powder, and black pepper. The mixture is covered and simmered gently until all liquid is absorbed and the rice and pasta are tender.

Optional diced tomatoes stirred in after cooking add a fresh, slightly acidic contrast and visual interest. Chopped parsley sprinkled at the end provides a fresh herbal note. The final dish has a balance of soft rice and tender, slightly toasted pasta with a savory broth base.

Homemade Rice-A-Roni works well as a mild-flavored side for poultry, pork, or vegetables, offering a homemade alternative to the boxed mix with a richer flavor from the toasted pasta and broth seasoning.
