Description

This salsa combines diced tomatoes and ROTEL tomatoes containing green chiles, providing a balance of sweetness and mild heat.   • 1 can 14.5 oz diced tomatoes
  • 1 can 10 oz original ROTEL tomatoes with green chiles
  • 1/4 yellow onion roughly chopped, large
  • 1/2 cilantro roughly chopped, bunch
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • lime juice of 1

Instructions

  1. Place the onion, cilantro, garlic powder, salt, and lime juice in the food processor or blender and process until very finely chopped.  Add some additional liquid from the tomatoes if needed.
  2. add the tomatoes and ROTEL to the mixture and pulse about 5 times or until the salsa reaches your desired consistency.
  3. Chill for 30 minutes to allow flavors to meld. Enjoy!

Notes

  • Use a food processor or blender for fine chopping to desired salsa texture.
  • Chill salsa for at least 30 minutes to enhance flavor melding.
  • Store salsa in an airtight container in the refrigerator for 5-7 days or freeze up to 2 months.
