Description
This salsa recipe uses fresh Roma tomatoes paired with canned diced tomatoes for added texture and flavor. Green onions and red onion contribute pungency while jalapeno adds mild heat. Cilantro and a large garlic clove provide herbal and aromatic notes. Lime juice brightens the salsa, and chili powder with cumin enhance the depth of flavor. A bit of granulated sugar can be added to balance acidity if desired.
All ingredients are pulsed in a food processor until finely chopped but still textured, avoiding a pureed consistency. The salsa develops flavor after refrigeration for a few hours, allowing the components to meld. It is served cold with tortilla chips or as a complement to Mexican dishes.
Variations include substituting green onions entirely with red onion for a stronger onion presence, using different canned tomatoes such as fire-roasted for smoky notes, or varying heat levels by including serrano or chipotle peppers. Additional vegetables like bell pepper or poblano peppers can also be added. For thinner salsa, a small amount of tomato juice or sauce is optional.
Ingredients
- 1 1/4 lbs Roma tomato about 5 - 6, ripe
- 1 (14.5 oz) can diced tomatoes petite
- 2 green onions ends trimmed, chopped into thirds
- 1/3 cup onion about 1/4 of a medium, red, chopped
- 1 jalapeno pepper seeded and roughly chopped
- 1/3 cup cilantro about a handful, fresh
- 1 garlic roughly chopped, large clove
- 2 Tbsp lime juice fresh
- 1/2 tsp chili powder
- 1/4 tsp cumin ground
- 1/2 tsp granulated sugar (optional)
- salt to taste
- black pepper to taste
Instructions
- Combine all ingredients in a food processor and pulse in 1 second bursts until all ingredients are finely chopped.
- Serve with tortilla chips. Note that salsa always tastes best after it's been refrigerated for a few hours, so if time allows let the flavors marinate together before serving.
- Store in refrigerator up to 1 week.

- Use ripe, high-quality tomatoes for best salsa flavor.
- Canned diced tomatoes with mild green chilis or fire-roasted tomatoes work well for variations.
- For stronger onion flavor, replace green onions with about 3/4 cup chopped red onion.
- Adjust heat by leaving seeds in jalapeno, using serrano peppers, or adding canned chipotle peppers in adobo sauce.
- Consider adding bell pepper, poblano, or Anaheim peppers for extra depth.
