The salsa is pulsed a few times in a food processor to achieve a slightly chunky consistency that mimics restaurant-style salsa.
The flavors meld when the salsa is refrigerated for at least an hour, improving its brightness and allowing the heat from the jalapeño to mellow. Adjusting tomato juice quantity alters thickness based on preference.
This salsa complements chips, tacos, grilled meats, or can be used as a topping for various dishes. It keeps refrigerated for a few days and can be frozen if desired.
Ingredients
- 28 ounces whole tomatoes with juices, 1 can, *see note, canned
- ½ cup cilantro chopped, fresh
- ¼ cup onion chopped
- 1 jalapeño chopped
- ½ lime juiced
- 1 clove garlic minced
- ½ teaspoon cumin
- ¼ teaspoon salt
Instructions
- Add all ingredients to a food processor (remove ½ cup juice from the tomatoes if desired). Pulse 4-6 times to get desired consistency.
- Refrigerate 1 hour before serving.
Notes
- For thicker salsa, remove about half a cup of juice from the canned tomatoes before blending.
- Diced canned tomatoes can be used as an alternative to whole tomatoes.
