This Homemade Sausage and Egg McMuffin recipe replicates the classic breakfast sandwich with seasoned pork or beef sausage patties, eggs cooked in rings for neat rounds, melted cheese, and toasted English muffins. The sausage is enhanced with herbs and spices, while the eggs are steamed in a lid-covered pan to your preferred doneness. The combination yields a flavorful sandwich with a tender, juicy sausage and a soft, round egg.

Description

The recipe begins by mixing ground pork or beef with sage, thyme, onion powder, black pepper, salt, and sugar to form sausage patties slightly larger than the English muffins to account for shrinkage during cooking. The patties are browned on both sides in oil, and cheese can be melted on top in the last minutes.

Eggs are cooked separately using metal rings greased and placed in a pan with a bit of water added before covering with a lid, steaming the eggs to gently cook them into neat rounds with optional runny yolks. English muffins are toasted with cheese slices melted on top before assembling the sandwich.

This recipe offers options for different meats, cooking variations for the eggs, and notes that pork produces juicier patties while beef is also common. The final sandwiches can be refrigerated and reheated or frozen with scrambled egg variations.

Ingredients

Servings

Sausage Patties

  • 1 lb / 500g ground pork (juicier) OR beef (mince) (Note 1)
  • 1/2 tsp sage dried ground
  • 1/2 tsp thyme dried
  • 1 tsp onion powder (or garlic powder)
  • 3/4 tsp black pepper
  • 3/4 tsp salt
  • 1/2 tsp sugar (any)

Muffins

  • 2 tbsp neutral cooking oil generic cooking oil
  • 4 egg
  • 4 English Muffin cut in half
  • 4 lices cheese (Note 3)

Instructions

  1. Preheat oven to 130C/275F.
  2. Place muffins on a baking tray, cut side up, and top with cheese. (Alternative - melt cheese on sausage patties, see video)

Sausage Patties

  1. Mix Sausage Patty ingredients in a bowl - use your hands to mix it real good!
  2. Shape into 4 patties (thick ones, or 5 Maccers size patties). Make them slightly larger than the muffins because they will shrink when cooking.
  3. Heat oil in a large non stick skillet over high heat. Add patties (in batches if needed). Cook the first side for 2 - 3 minutes or until browned. Flip then cook the other side until browned. (Optional: After flipping, top with cheese, cover with lid to melt).

Egg

  1. Meanwhile, heat another pan over medium high heat with 1 tbsp oil. Spray egg rings with oil and place in the skillet. (Note 4 for other cook methods). 
  2. Crack egg into the rings. Add around 2 tbsp water into the skillet then cover with a lid. Cook for 1 - 2 minutes or until egg is cooked to your liking (I like runny yolks). 

Assemble

  1. Remove warm muffins from the oven. Top with sausage, then egg, the lid of muffin.
  2. Serve and enjoy!

Notes

  • Use pork for juicier, tender sausage patties; beef or other meats like chicken or turkey work with seasoning adjustments.
  • Alternative egg cooking methods include using tuna cans as rings, baking in muffin tins, or forming round shapes in the pan.
  • Melt cheese on the sausage patties or English muffins depending on preference.
  • Refrigerate assembled sandwiches for up to 4 days and reheat gently in microwave or oven.
  • Frozen sandwiches can use scrambled egg or omelette slices; avoid freezing cooked sunny side up eggs as whites may turn rubbery.
