Description
The process starts by browning ground beef with finely chopped onions and draining excess fat. Meanwhile, a sauce is prepared mixing tomato sauce, ketchup, brown sugar, vinegar, Worcestershire sauce, mustard, salt, and pepper. The sauce is poured over the beef and simmered uncovered for about 20 minutes to meld flavors and thicken the mixture, though covering can keep it looser if preferred.
This savory-sweet filling is spooned onto split sandwich buns for serving. The tang from vinegar, umami notes from Worcestershire sauce, and sweetness from brown sugar balance the savory beef. Seasoning provides depth, while the onions add texture.
Variations include substituting ground beef with turkey or venison and changing the chopped onion to celery or green peppers. The recipe yields 4 to 6 cups of filling, enough for around 8 sandwiches.
Store leftover meat mixture covered in the refrigerator for up to 4 days.
Ingredients
- 1 pound ground beef (see note 1)
- 1 medium onion finely chopped (see note 2)
- 1 (8 ounce) can tomato sauce
- 1/2 cup ketchup
- 1 tablespoon brown sugar (see note 3)
- 1 tablespoon white vinegar or apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried mustard or yellow mustard or Dijon mustard
- salt freshly ground
- black pepper freshly ground
- 8 sandwich buns split
Instructions
- In a large saucepan or Dutch oven over medium-high heat, combine beef and onion. Cook until the meat is mostly browned, about 5 minutes. Drain well.
- Meanwhile, in a small bowl whisk together tomato sauce, ketchup, brown sugar, vinegar, Worcestershire, mustard, and salt and pepper to taste (I like 1/4 teaspoon salt and 1/8 teaspoon pepper).
- Pour sauce ingredients over drained beef and stir until evenly coated. Simmer uncovered 20 minutes, stirring occasionally (cover if you prefer a sloppier Sloppy Joe). Serve in buns.
Notes
- Ground beef can be substituted with ground turkey or venison for different flavors.
- Finely chopped celery and green peppers can replace onions to vary texture and taste.
- Omit brown sugar if you prefer less sweetness; adjust to your taste preference.
- Yield: Makes 4 to 6 cups of meat mixture, suitable for about 8 sandwiches.
