Description

Homemade Ssamjang combines doenjang (fermented soybean paste) and gochujang (chili paste) with minced garlic, mirin (sweet rice wine), sugar or honey, sesame oil, and toasted sesame seeds to create a richly flavored Korean dipping sauce. The mixture is stirred until smooth, balancing fermented, spicy, sweet, and nutty notes.

The sauce is thick in texture, perfect for scooping and spreading on grilled meats or fresh vegetables, especially when served with Korean BBQ items like samgyupsal (pork belly) or bossam (braised pork). It enhances the savoriness and adds a subtle heat with its chili paste base.

It can be made ahead and refrigerated for 2 to 3 weeks in an airtight container, maintaining its flavor. Optional additions such as chopped green onions, green chilies, or walnuts can introduce more texture and complexity.

  • 1 1/2 tbsp gochujang Korean chili paste
  • 1 tbsp garlic minced
  • 1 tbsp sweet rice wine mirim
  • 1/2 tbsp sugar or honey
  • 1 tbsp sesame oil
  • 2 tsp sesame seeds toasted

Instructions

  1. In a small mixing bowl, combine all the ingredients and mix well.
  2. Homemade ssamjang typically lasts 2-3 weeks in the fridge if kept in an airtight container.
  3. Note: To give your ssamjang an extra kick, you can add chopped green onions, green chilies, or even walnuts. This will add more flavor and texture to the sauce and make it even fancier.
  4. Dishes that pair well with ssamjang: Samgyupsal (BBQ pork belly), Bossam (braised pork belly), Beef Bulgogi (Korean marinated beef), Ssambap (Korean lettuce wrap), Galbi (Korean BBQ ribs).
