Homemade Steak Marinade
Description
The marinade combines several liquid condiments with minced garlic and seasonings to create an aromatic and umami-rich base. Soy sauce provides saltiness and depth, balsamic vinegar adds acidity and subtle sweetness, Worcestershire sauce delivers complexity, while Dijon mustard and brown sugar balance the profile with sharp and sweet notes.
When the marinade is poured over steaks placed in a sealed bag or covered dish, it helps tenderize the meat while imparting layers of flavor. The flexible marinating window lets cooks adjust to timing needs, turning the meat occasionally to ensure even coverage.
Grilling the marinated steak after soaking brings out the melded flavors and allows caramelization of the brown sugar and garlic. This simple yet layered marinade can complement many steak cuts and cooking styles.
For longer storage, the steak can be frozen in the marinade using double-bagging to prevent leaks. Frozen marinated meat remains good for up to six months, offering convenience for future grilling sessions.
Ingredients
- 1/2 cup canola oil
- 1/3 cup soy sauce
- 1/3 cup balsamic vinegar
- 1/4 cup Worcestershire sauce
- 5 cloves garlic (minced)
- 1 tablespoon Dijon mustard
- 1 tablespoon brown sugar
- kosher salt (to taste)
- 3-5 pounds steak (your favorite cut)
Instructions
- Combine all ingredients (except steak) in a medium-sized mixing bowl or large liquid measuring cup and whisk until well combined.
- Place steak in a large Ziplock bag and pour marinade over the top. Press as much air out as you can and seal.
- You can also put the steak in a shallow dish. Pour the marinade over the top and cover.
- Allow steak to marinate for at least an hour (and up to 5 hours). Flip the bag over half way through marinating (or flip the steaks over in the dish).
- Grill steak to desired doneness and enjoy!
Notes
- Freeze marinated steaks by double-bagging to avoid leaks and preserving freshness for up to six months.
- Marinate steaks between 1 and 5 hours for optimum flavor absorption before grilling.
