Homemade Suddenly Salad Bacon Ranch Pasta Salad

This Homemade Suddenly Salad is a cold pasta salad featuring shell pasta, shredded carrot, green peas, ranch dressing mix, bacon bits, and mayonnaise. The pasta and vegetables are boiled and cooled before mixing with a creamy, tangy ranch-flavored dressing with crunchy bacon bits for added texture and smoky flavor.

Description

The salad combines cooked shell pasta and shredded carrots boiled together, then rinsed in cold water to stop cooking and cool them fully. Peas, ranch dressing seasoning, bacon bits, onion powder, and mayonnaise are mixed together separately and then combined with the cooled pasta mixture. This results in a creamy and flavorful salad with a balance of crunchy vegetables and soft pasta.

Because the dressing is based on a mix and mayonnaise, the salad holds a familiar ranch flavor with added smoky bacon. It should be refrigerated before serving, allowing the flavors to meld and the salad to chill.

Key tips include not overcooking the pasta and thoroughly cooling it under cold water, which prevents further cooking and keeps the salad from becoming mushy. Choosing a quality pasta brand can also improve texture and taste.

Ingredients

Servings
  • 2 cups shell pasta dry
  • 1/2 cup carrot shredded
  • 8 ounces green peas
  • 1 packet Ranch dressing mix Hidden Valley brand
  • 2 tablespoons bacon bits
  • 1/2 teaspoon onion powder
  • 2/3 cup mayonnaise

Instructions

  1. Bring water to a rolling boil in a large saucepan. Add pasta and carrot shreds and boil for 10 minutes. Drain using a strainer and rinse the pasta and carrots with cold water. Shake the strainer to remove excess water from the pasta.
  2. In a medium-sized bowl, mix together the peas, the entire packet of ranch dressing mix, bacon bits, onion powder, and mayonnaise.
  3. Add the cooked pasta and carrots. Stir until the pasta is coated with the mayonnaise mixture.
  4. Cover and refrigerate until serving.

Notes

  • Avoid overcooking the pasta to maintain firmness in the salad.
  • Rinse cooked pasta and carrot shreds under cold water to halt cooking and cool them completely.
  • Pick a trusted pasta brand to ensure better texture and flavor.
