Description
This granola features a nutrient-dense combination of oats and oat flour combined with flaxseed meal and sesame seeds, contributing fiber and healthy fats. A trio of raw nuts—almonds, pecans, and cashews—adds substantial crunch and richness.
The wet ingredients, including melted coconut oil, maple syrup, and vanilla extract, coat the dry mix before baking at a moderate heat. Baking twice with stirring encourages even toasting and golden clumps, while cooling on the baking sheet helps preserve texture and clumping.
Dried Medjool dates and golden raisins are stirred in once cooled to add natural sweetness and chewy contrast. The granola is suitable for vegan and gluten-free diets as formulated.
To make oat flour at home, blend rolled oats until finely ground. Store the granola airtight in a mason jar or container to maintain freshness for up to one to two months.
Ingredients
- Dry Ingredients:
- 2 cups rolled oats old fashioned, gluten free
- ½ cup oat flour gluten free if desired
- 2 tablespoons flaxseed meal
- 2 tablespoons white sesame seeds
- ¾ cup almonds sliced, raw
- ¾ cup pecan raw halves
- ¾ cup cashew nuts raw
- 2 teaspoons ground cinnamon
- ½ teaspoon salt sea salt
- Wet Ingredients:
- ¼ cup coconut oil
- ⅓ cup pure maple syrup
- 1 teaspoon vanilla extract
- ½ cup Medjool dates packed, pitted, chopped
- ½ cup golden raisins
Instructions
- Preheat oven to 300 degrees F. Line a large baking sheet with parchment paper.
- In a large bowl, whisk together oats, oat flour, flaxseed meal, sesame seeds, almonds, pecans, cashews cinnamon and salt.
- Add coconut oil, maple syrup, and vanilla extract to a small saucepan and place over low heat, stirring frequently until coconut oil is completely melted. Pour over dry ingredients and mix well until oats are completely coated. Sometimes I find it necessary to use my hands.
- Next spread the granola evenly in the baking pan and bake for 20 minutes.
- After 20 minutes stir granola, and bake 15-20 minutes longer or until granola is just slightly golden brown. Remove from the oven and allow the granola to cool completely on the baking sheet so that little clumps stay intact.
- Once cooled, stir in chopped dates and raisins. Transfer to an airtight container or large mason jar. Best used within 7-10 days. Makes 18 servings.
