Description

This tahini recipe begins by evenly spreading white sesame seeds on parchment and baking at 375°F until lightly browned, which intensifies their natural flavor. After cooling completely, the toasted seeds are combined with avocado oil and a pinch of fine sea salt in a food processor and blended until smooth. Additional oil is added in small increments if necessary to achieve a creamy consistency.

The finished tahini is stored in an airtight container in the refrigerator, where it keeps for three to four weeks. It resembles natural peanut butter in that it may separate, requiring stirring before use. This versatile ingredient is suitable for making sauces, dressings, or as a spread.

  • 2 cups white sesame seeds
  • 1-2 tablespoons avocado oil grapeseed oil, canola oil, neutral oil
  • 1/8 teaspoon salt fine sea salt

Instructions

  1. Preheat the oven to 375°F. Line a baking sheet with parchment paper. Spread the sesame seeds into an even layer on the parchment and bake for 10 minutes or so.
  2. As soon as they have a light brown exterior, take them out of the oven and transfer to a plate to cool.
  3. Once completely cooled, put your toasted sesame seeds and 1 tablespoon of the oil and salt in a food processor, and blend until smooth. If it needs more oil, add it by the ½ tablespoon blending in between each addition.
  4. Scoop the finished tahini into an airtight container and keep in the fridge for 3-4 weeks. You may need to give it a good stir before each use much like you would with natural peanut butter, it has the tendency to separate.
  5. Store in an airtight container at room temperature in a cool dry place.
