Homemade Teriyaki Sauce Recipe

This Homemade Teriyaki Sauce blends soy sauce, brown sugar, mirin, and aromatics like garlic and ginger to create a flavorful glaze with a balanced sweet and savory profile. Chili flakes add optional heat, while cornstarch thickens the sauce to a smooth consistency ideal for glazing meats or stir-fries. The sauce develops its flavor through simmering, making it versatile for a range of dishes.

Description

The Homemade Teriyaki Sauce combines soy sauce, water, brown sugar, mirin, minced garlic and ginger, and sesame oil with an optional addition of chili flakes for spiciness. A cornstarch slurry thickens the sauce as it simmers for several minutes, yielding a glossy, slightly thickened glaze that clings well to food. The balance of salty soy, sweet brown sugar and honey, and aromatic aromatics creates a complex and adaptable sauce base.

This sauce suits use as a glaze for grilled or stir-fried meats, vegetables, or as a dipping sauce. Adjusting the chili flakes adjusts the heat, from mild to spicy, according to preference. It can be strained after cooling for a smooth texture and refrigerated for about a week.

Ingredients

Servings
  • ½ cup soy sauce
  • ½ cup water
  • ¼ cup brown sugar
  • 3 tablespoons mirin
  • 1 tablespoon chili flakes omit if you don't want spicy
  • 1 tablespoon honey
  • 2 teaspoons garlic minced
  • 1 teaspoon ginger fresh, minced
  • 1 teaspoon sesame oil
  • ¼ cup water cold
  • 2 teaspoons cornstarch

Instructions

  1. To a small pot, add soy sauce, water, brown sugar, chili flakes, honey, garlic, ginger, sesame oil and mirin.
  2. In a small bowl, swirl together cold water and cornstarch until you have a thin slurry. Pour into the pot and stir to incorporate.
  3. Bring to a quick boil, then reduce heat and simmer 3-4 minutes to thicken and allow the flavors to develop.
  4. Remove from heat, cool, and store in the fridge. Strain, if desired. Keeps a week or so.

Notes

  • This recipe makes about 2 cups of sauce, suitable for multiple servings or use as a marinade or glaze.
  • Adjust heat by varying the amount of chili flakes or by substituting with hotter peppers or chili powders.
  • Omit chili flakes entirely for a milder, classic teriyaki flavor.
