Homemade Tomato Ketchup
Description
The ketchup begins by cooking chopped tomatoes with red wine vinegar and sugar to build a tangy sweetness. Minced garlic and ginger add depth and aromatics while ground coriander, cinnamon, allspice, smoked paprika, and a pinch of ground cloves create a complex spice profile. After simmering, the mixture is pureed and strained to remove seeds, yielding a smooth texture.
Continuing to simmer the strained sauce thickens it to the desired consistency without added thickeners. This ketchup can accompany fries, burgers, or sandwiches and offers a homemade alternative to store-bought varieties with control over the ingredients and spices.
Variations can include adding red pepper flakes or chipotle for heat or experimenting with different spices such as onion powder, cumin, or curry powder to alter the flavor profile. Care should be taken when blending hot liquids to avoid splatters.
Ingredients
- 2 lb tomato roughly chopped, 900g
- 1/2 cup red wine vinegar or white wine vinegar
- 4 tbsp sugar
- 2 garlic minced, cloves
- 1 tsp ginger minced
- 3/4 tsp ground coriander
- 3/4 tsp ground cinnamon
- 1/2 tsp ground allspice pimento
- 1/2 tsp smoked paprika
- salt to taste

Instructions
- Mix together all the ingredients into a heavy bottomed saucepan over medium heat, bring to the boil and reduce to a simmer for 30 minutes.
- Switch off the heat, let cool for a few minutes and puree using a immersion blender or table top blender.
- Strain ketchup, to remove the seeds.
- Return sieved ketchup back into the sauce pan and simmer for another 30 minutes or until thickened to your taste.
- Let cool, decant and serve or store till needed.
Notes
- Take care when blending hot ketchup mixtures to avoid splattering; blend in small batches if using a table blender.
- For heat, consider adding red pepper flakes or chipotle peppers.
- Experiment with spices by adding onion powder, cumin, or curry powder to customize the flavor.
