Homemade Tortilla Chips

These Homemade Tortilla Chips are made by cutting corn tortillas into wedges and frying them until crisp and golden. Seasoned with sea salt right after frying, they achieve a satisfying crunchy texture. The method uses a moderate frying temperature to ensure evenly cooked chips without excess oil absorption or burning. These chips are ideal for snacking or serving with dips.

Description

The recipe transforms simple corn tortillas into crispy tortilla chips by slicing them into pieces and frying in oil heated to about 350°F. Using a heavy skillet or Dutch oven ensures stable temperature control during frying. The chips are fried just until golden yellow and crisp, carefully flipped midway to promote even browning without burning. After frying, they are drained on paper towels to remove excess oil and immediately sprinkled with sea salt which adheres well while the chips are still warm.

The texture results in crunchy chips with a balanced neutral corn flavor suitable for dipping or topping. The instruction to fry in batches prevents overcrowding, maintaining consistent oil temperature and crisping. The seasoning step ensures chips have a pleasant salty finish.

Practical tips include monitoring oil temperature to avoid burnt or oily chips and offering alternative baking or air fryer methods for those avoiding frying. Salting the chips while hot helps the salt stick effectively. Careful observation during frying prevents sudden overcooking.

Ingredients

Servings
  • 12 corn tortillas
  • vegetable oil for frying (avocado, canola, and corn oil all work
  • sea salt for seasoning, flaky or fine

Instructions

  1. Line a large baking sheet or plate with paper towels and set aside.
  2. Cut the corn tortillas into fourths for large tortilla chips or into sixths for small tortilla chips.
  3. Fill a heavy skillet or Dutch oven with ¼ - ½ -inch of oil or enough oil to fully submerge the chips.
  4. Heat the oil over medium-high heat until it reaches 350°F or a small piece of tortilla sizzles when placed in the oil.
  5. Add a handful of tortilla wedges into the oil and fry for about 2 minutes, flipping halfway through with metal tongs or a slotted spoon, until the chips are crisp and turn a beautiful golden yellow color. Transfer the chips to the lined baking sheet or plate to drain off any excess oil. Continue working in batches so as not to completely crowd the skillet.
  6. Sprinkle the chips with salt and serve immediately.

Notes

  • Maintain oil temperature around 350°F for even crisping without burning.
  • Season chips right after frying to help salt adhere better.
  • Try baking or air frying as alternatives to deep frying for less oil.
  • Keep a close eye during frying since chips can burn quickly once golden.
