Homemade Turkey Breakfast Sausage Patties

These turkey breakfast sausage patties blend ground lean turkey with grated zucchini and a mix of spices including sage, thyme, fennel seeds, and red pepper flakes, bringing out a balanced savory and slightly spicy flavor. Maple syrup adds a subtle sweetness that complements the herbs, creating a rich profile. The patties are pan-fried in olive oil until browned and cooked through, resulting in a moist texture thanks to the zucchini and lean turkey combination. They are a practical choice for a homemade breakfast protein option.

Description

The Homemade Turkey Breakfast Sausage Patties combine lean ground turkey and grated zucchini to keep the patties moist without excess fat. Aromatic dried herbs like thyme and sage, along with crushed fennel seeds and a pinch of red pepper flakes, build a classic sausage flavor profile while garlic powder and nutmeg add depth. A touch of pure maple syrup balances the spices with a mild sweetness. Formed into individual patties and cooked in olive oil, they develop a nicely browned crust with a tender interior. This recipe yields eight patties suitable for breakfast or brunch.

Cooking them evenly on medium heat in a nonstick skillet avoids dryness and ensures thorough cooking over about eight minutes per side. The grated zucchini introduces moisture and subtle vegetable notes without overwhelming the sausage character. The inclusion of warming nutmeg and fennel seeds distinguishes these patties from simple turkey burgers.

When serving, these sausage patties pair well with eggs, toast, or can be added to breakfast sandwiches. For best texture, cook them fresh and avoid leaner turkey varieties like 99% lean, which can yield dry results. The maple syrup is optional and can be omitted for dietary preferences such as Whole 30 or Keto.

Use lean ground turkey (93%) rather than extra lean to prevent dry patties.Maple syrup can be omitted for Keto or Whole 30 diets without affecting the savory flavor much.Allow patties to come to room temperature before cooking for even heat penetration.

Ingredients

Servings
  • 1 pounds ground turkey See Note 1, lean 93%
  • ½ cup zucchini grated
  • 2 tablespoons pure maple syrup (See Note 2)
  • 1 teaspoon thyme dried
  • 1 teaspoon sage dried
  • ¾ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon ground nutmeg
  • ½ teaspoon fennel seeds crushed with knife, dried
  • ½ teaspoon red pepper flakes
  • 4 teaspoon olive oil

Instructions

  1. In a medium bowl, combine all of the ingredients except for the olive oil. Stir until well combined.
  2. Divide the mixture into 8 portions. Using your hands, form each portion into patties about ¾-inch thick. Place the patties on a baking sheet lined with waxed paper until ready to cook. If not cooking right away, cover with plastic wrap and store in the fridge. Bring to room temperature before cooking.
  3. Heat 1 tablespoon olive oil in a medium nonstick skillet. Add 4 patties and cook until the patties are browned and cook through, about 8 minutes per side.
  4. Repeat with the remaining 1 tablespoon olive oil and patties. Serve.

Notes

  • Use lean ground turkey (93%) rather than extra lean to keep patties moist and tender.
  • If avoiding added sugars, the maple syrup can be left out without impacting the overall flavor too much.
  • Bring patties to room temperature before pan-frying to ensure even cooking.
