Homemade Turkey Gravy
Description
The gravy preparation begins by melting butter and whisking in flour to form a roux, which is cooked until it develops a slight brown color and nutty aroma. Gradually adding broth and turkey drippings while whisking prevents lumps and builds a smooth consistency. The gravy is heated through and seasoned with kosher salt and freshly ground black pepper to taste.
Additional flavorings can be incorporated, such as fresh herbs, finely grated onion, garlic, apple components, or even wine and cream, depending on preference. The gravy thickens as it cooks and can be adjusted in thickness or seasoning by modifying the roux or liquid ratio.
This gravy is ideal for serving alongside roasted turkey but can also enhance other meats and poultry. It is flexible to accommodate seasoning preferences and available ingredients, including options to make it without drippings by using a seasoning blend for flavor.
Ingredients
- 1/4 cup butter
- 1/4 cup flour
- 2 cups broth
- 2 tablespoons drippings see notes for seasoning without drippings
- salt to taste, kosher salt|freshly ground
- black pepper to taste, kosher salt|freshly ground

Instructions
- Melt the butter over medium heat in a heavy bottom saucepan.
- When melted, whisk with the flour until a paste forms. Continue to whisk until roux starts to brown and become fragrant.
- Slowly add the broth and drippings while whisking vigorously. Continue to whisk until fully heated.
- Taste test for seasoning. Add the salt and freshly ground black pepper sparingly until desired taste is achieved.
- Add other seasonings, if desired and continue to heat for 5-15 minutes.

Notes
- To make gravy without drippings, add 1 teaspoon of turkey rub seasoning or a similar blend, adjusting for taste.
