Description

For this unsweetened applesauce, a blend of apples such as Braeburn and dessert apples with colorful skins are cored, sliced into eighths, and cooked gently with a small amount of water. Cinnamon and optional spices like nutmeg or vanilla are added to enhance the natural fruit flavors. The apples cook covered on medium heat until very soft and mushy, which typically takes about 20 minutes. After cooking, the mixture is pureed using a stick blender or food processor to achieve a smooth or slightly chunky texture depending on preference.

  • 2 kg / 4.4 pounds apple
  • ½ cup / 120ml of water
  • 2 teaspoon cinnamon
  • pinch nutmeg or vanilla or mixed spice (all optional, all lovely)

Instructions

  1. Choose your apples. I normally use what's in my fruit bowl, so a mix of Braeburn and dessert apples with colourful skins.
  2. Core and slice your apples into 8 slices.
  3. Add cinnamon and other spices, if using. This is the stuff that puts the wow in it!
  4. Cook the apples with 120 ml water on medium heat for 20 minutes (lid on!) until soft and mushy.
  5. Puree with a stick blender or in your food processor to your favourite consistency.

  • Use a variety of apples for balanced sweetness and flavor.
  • Cook apples covered over medium heat until soft to ensure smooth pureeing.
