Description
This Homemade Vanilla Extract recipe uses whole vanilla beans cut lengthwise and submerged in vodka. Typically, four to five beans per one cup of vodka are used to ensure a strong infusion. The beans release their aromatic seeds and oils into the alcohol over time, resulting in a dark, fragrant extract ideal for enhancing baked goods and desserts.
Preparation is simple: slit the beans to expose the seeds and place them in a jar filled with vodka. The jar is sealed tightly and shaken occasionally during a brewing period of at least two months, though 6 to 12 months yields a more intense flavor. When the extract nears depletion, more vodka can be added to the same beans to produce additional batches.
Using high-quality Grade B Madagascar beans or similar ensures deep vanilla flavor. While vodka is the standard base, substituting with brandy, rum, or bourbon imparts unique flavor variations. Mason jars or small glass containers work well for storing the extract, and labels or dates can track aging time. This method produces a natural and customizable vanilla extract for home baking needs.
Ingredients
- 10 Vanilla Beans or Tahitian or Mexican beans, if preferred, Madagascar, Grade B
- 2 cups vodka , 80 proof

Instructions
- Gather ingredients and jar(s). You will need 4-5 beans for every 8 ounces (1 cup) of alcohol.
- Gently cut slits, lengthwise down the vanilla beans, using a sharp knife. Place the vanilla beans in jar (cut them in half if needed, to submerge them in alcohol).
- Fill jars with vodka. Secure lid tightly on the bottle and shake gently.
- Allow to steep/brew for at least 2 months, or ideally 6-12 months for best flavor. Shake bottles occasionally. Write date on jars or use our labels.
- When running low, add more vodka to the bottle and brew again, reusing the same beans for up to one more batch.
Notes
- Use high-quality Grade B Madagascar vanilla beans for best flavor; Tahitian or Mexican beans work too.
- 80 proof vodka is standard, but brandy, rum, or bourbon can replace it for flavor variations.
- Mason jars or small glass bottles are suitable for extracting and storing vanilla; label with dates.
