Homemade Vanilla Extract Recipe

Homemade Vanilla Extract is created by steeping split vanilla beans in a choice of alcohol such as vodka, bourbon, rum, or whiskey for 6 to 8 weeks. The process extracts and concentrates the vanilla flavor into a richly aromatic liquid that can be used in baking and cooking. The longer the beans steep, the deeper the flavor becomes.

Description

This Homemade Vanilla Extract recipe involves placing 6 to 7 vanilla beans, split or whole, into a sterilized bottle and filling it with around 1 cup (8 ounces) of a preferred 80-proof alcohol like vodka, bourbon, rum, or whiskey. An inch of headspace is left to allow shaking.

The bottle is sealed tightly and stored in a cool, dark place for 6 to 8 weeks, shaken once a week to redistribute the beans and extract flavor. Over time, the alcohol takes on a darker color and richer vanilla aroma. The final extract yields approximately 1 cup of pure vanilla flavoring suitable for culinary use.

A perpetual vanilla extract can be maintained by topping off the bottle with fresh alcohol and adding new beans as they lose potency, allowing continuous extraction. This method enables ongoing use of the homemade extract without starting a new batch each time.

Ingredients

Servings
  • 6 to 7 to 7 Vanilla Beans split or unsplit
  • 1 cup alcohol vodka, bourbon, rum, or whiskey, 80 proof, 8 ounces

Instructions

  1. Add vanilla beans to a sterilized bottle. If the beans are too long for the bottle, cut it in half or thirds as needed.
  2. Fill the bottle with your choice of alcohol, leaving about an inch at the top of the bottle.
  3. Secure the top of the bottle. Label and shake vigorously.
  4. Store in a cool, dry, and dark location for 6 to 8 weeks, shaking once per week. The longer the vanilla extract steeps, the darker and more prominent the vanilla flavor and scent will be.

Notes

  • This recipe yields approximately one 8-ounce bottle of vanilla extract; quantities can be scaled up or down as needed.
  • To maintain a perpetual vanilla extract, add fresh alcohol and vanilla beans to the existing bottle as the extract is used, replacing beans after two to three cycles for consistent flavor.
  • Store the extract in a cool, dry, and dark place while it steeps to develop maximum flavor.
