Homemade Yellow Mustard
Description
This mustard recipe uses dry mustard powder as a base, which is mixed with apple cider vinegar and water, lending acidity and moisture. Turmeric provides color and earthiness, while garlic and paprika add subtle depth. Brown sugar cuts the bitterness and rounds out flavor with gentle sweetness. A cornstarch slurry helps thicken the mustard during the gentle simmer, which also melds and develops the flavors.
The cooking time of about 20-25 minutes reduces the mixture to a desirable thickness, suitable for spreading or dipping. The mustard can be stored refrigerated for up to three months, allowing the flavors to mature over time. It yields about 5.25 ounces, roughly equivalent to 21 small packets.
Substitutions include using white vinegar instead of apple cider vinegar and optional omission or substitution of sugar type, which affects the bitterness and immediate usability of the mustard.
Ingredients
- 1/3 cup mustard powder 1.15 oz or 32 g
- 1/4 cup apple cider vinegar
- 1/2 cup water
- 1/4 teaspoon salt
- 1/8 teaspoon Turmeric
- pinch garlic
- pinch paprika
- 1 tablespoon brown sugar 15 g
- 1 teaspoon cornstarch
- 1 teaspooin water for cornstarch slurry
Instructions
- Make cornstarch slurry: Add cornstarch and 1 teaspoon of water to a small bowl and mix to create a slurry. Set aside
- Cook Down Mustard: Add all ingredients to a small pot and heat over medium. Whisk so all of the ingredients are combined/dissolved. Lower heat to medium-low and let simmer for 20-25 minutes until the mustard has thickened and cooked down to a thickness of your liking.
- Store: Remove from heat and add to a jar. Store in the fridge for up to 3 months.
Notes
- This recipe yields approximately 5.25 ounces of mustard, similar to 21 small packets.
- Apple cider vinegar is preferred, but white vinegar can be used.
- Brown sugar tempers mustard bitterness but is optional; white sugar can be a substitute.
