Homestyle Crockpot (No-Boil) Mashed Potatoes

This slow cooker mashed potato recipe uses peeled russet potatoes cooked in chicken broth until tender, then mashed with butter, cream cheese, and heavy cream. The result is creamy, smooth mashed potatoes with optional onion and garlic powder for subtle seasoning, suitable for comforting side dishes made hands-off in a crockpot.

Description

The Homestyle Crockpot Mashed Potatoes start with peeled and chopped russet potatoes placed in a slow cooker with chicken broth and seasoned with optional onion and garlic powders. The potatoes cook on high for three and a half to four hours until fork-tender. After draining, they are mashed directly in the crockpot with butter, cream cheese, heavy cream, and salt and pepper, making a creamy consistency that can be adjusted with more cream as needed.

This dish offers tender, creamy mashed potatoes with a mild savory flavor enhanced by dairy and gentle seasonings. The slow cooker method frees up stovetop space while delivering a reliable, hands-off preparation approach. These mashed potatoes complement a wide range of main courses, especially roasted or grilled meats.

To check doneness, pierce a potato with a fork to confirm softness. Yukon gold potatoes can be substituted, but waxier potatoes like red or white might produce stickier mashed potatoes. The dish can be kept warm in the slow cooker for several hours before serving.

Ingredients

Servings
  • 5 lbs. russet potato peeled and chopped into 1 inch pieces
  • 32 oz chicken broth (reduced sodium is best)
  • 1 cup butter divided, unsalted, 2 sticks
  • 8 oz cream cheese softened and cubed
  • 1/4 cup heavy cream room temperature
  • 1/2 tsp onion powder (optional)
  • 1/2 tsp garlic powder (optional)
  • salt to taste
  • black pepper to taste

Instructions

  1. Grease sides of slow cooker insert lightly with butter, then add chopped potatoes.  Top with onion powder and garlic powder, then pour in chicken broth.
  2. Cube 1 of the sticks of butter and place cubes around the tops of the potatoes.  Cover and cook on HIGH for 3 1/2 - 4 hours.
  3. Drain potatoes then place back in the crockpot.  Add remaining stick of butter (cubed), cream cheese, heavy cream and salt and pepper.  Start with 1/2 tsp of kosher salt and 1/4 tsp pepper and adjust from there.
  4. Use a potato masher to mash potatoes until mashed to your desired consistency, using a bit more heavy cream if needed.
  5. Serve right away, or cover and set to WARM setting for a few hours.

Notes

  • Check potatoes for doneness by piercing with a fork; they should be easily pierced when ready.
  • Yukon gold potatoes can be used instead of russets for a slightly different texture.
  • Waxier potatoes like red or white may become gluey when mashed; use these with caution.
  • Keep mashed potatoes warm on the slow cooker 'warm' setting if not serving immediately.
