Description

Honey Bacon Baked Beans start with thick-cut bacon cooked until browned and rendered of most fat in a heavy skillet. Removing most excess fat, onions are then cooked in the bacon fat until caramelized, which adds a sweet, savory base. Adding back the bacon along with three types of drained canned beans combines diverse textures and mild bean flavors.

The beans are mixed with a sauce of honey, water, ketchup, molasses, brown sugar, Worcestershire sauce, and yellow mustard, providing layers of sweetness, tang, and slight spiciness. Covering and baking this mixture at 375°F for an hour allows flavors to meld and sauce to thicken while beans become tender but intact.

  • 4 lices Bacon cut into cubes, thick cut
  • 1/2 cup chopped yellow onion
  • 1 (16-oz) can pinto beans , drained and rinsed
  • 1 (16-oz) can White beans , drained and rinsed
  • 1 (16-oz) can Kidney Beans drained and rinsed, dark red
  • 2 tbsp honey
  • 1/2 cup water
  • 2/3 cup ketchup
  • 1/3 cup molasses
  • 1/3 cup brown sugar packed
  • 1 tbsp Worcestershire sauce
  • 1 tablespoon yellow mustard

Instructions

  1. Preheat oven to 375 degrees.
  2. Place bacon in a large cast iron or other heavy bottomed oven safe skillet.
  3. Cook over medium heat until browned and most of the fat is rendered.
  4. Remove the bacon.
  5. Cook the onion in the bacon fat until caramelized and brown.
  6. Pour out the excess bacon fat [you can use this bacon fat to make my delicious Yukon Potato Salad with Bacon Vinaigrette!]
  7. Add the bacon back into the pan.
  8. Add in the beans and the rest of the ingredients.
  9. Cover tightly and cook in the oven for 1 hour.
