Honey BBQ Meatballs

Honey BBQ Meatballs combine a tender blend of ground beef and pork with Parmesan, parsley, and spices to form flavorful meatballs. After baking to develop a crisp exterior, they are coated in a sweet and tangy sauce made from barbecue sauce, honey, and grape jelly, then baked again to develop a sticky glaze. The dual baking method ensures juicy meatballs with a caramelized exterior and rich BBQ flavor.

Description

The meat mixture includes ground beef and pork combined with beaten egg, Parmesan cheese, chopped parsley, salt, pepper, milk, breadcrumbs, garlic, and onion, which gives the meatballs a moist and well-seasoned profile. The mixture is carefully combined to avoid overworking, maintaining tenderness when cooked.

The formed meatballs are baked until they develop a lightly crisp surface. Most grease is discarded before they are coated in a glossy sauce made of barbecue sauce, honey, and grape jelly. Covered with foil, the meatballs bake again to finish cooking and allow the sauce to thicken and cling to the meatballs.

This dish works well as a hearty appetizer or part of a main meal, offering a balance of savory and sweet flavors with a tender yet slightly crisp texture. The use of grape jelly adds a subtle fruity sweetness that melds with the barbecue sauce.

Ingredients

Servings
  • 1 pound ground beef
  • 1 pound ground pork
  • 1 large egg beaten
  • ½ cup Parmesan Cheese grated
  • 2 tablespoons flat-leaf parsley chopped
  • 2 teaspoons kosher salt
  • ½ teaspoon black pepper
  • ½ cup milk whole
  • ½ cup dry breadcrumbs 54 g, fine
  • 2 teaspoons garlic minced
  • ¼ cup onion finely chopped
  • cup  barbecue sauce 280 g
  • ⅓  cup  honey 113 g
  • cup  grape jelly

Instructions

  1. Preheat oven to 350°F. Spray a 9x9-inch baking dish with nonstick cooking spray.
  2. In a large bowl, combine the ground beef, ground pork, beaten egg, cheese, parsley, salt, and pepper. Mix until just combined.
  3. In a medium bowl, combine the milk, breadcrumbs, garlic, and onion.
  4. Add milk mixture to the meat mixture, careful not to overwork ingredients.
  5. Greasing hands before starting, form the mixture into desired-size meatballs. (We used a heaping 2-tablespoon scoop for each meatball.) Place into the prepared baking dish.
  6. Place in the oven and roast for about 20 minutes, or until the meatballs are crisp on the outside.
  7. Remove the meatballs from the oven. Carefully discard most of the grease.
  8. In a medium bowl, combine the barbecue sauce, honey, and grape jelly. Pour the sauce over the partially cooked meatballs.
  9. Cover the dish with aluminum foil. Place the meatballs back into the oven to bake for an additional 20-25 minutes, or until the meatballs are cooked to an internal temperature of 165°F. (Cooking times may vary, depending on the size of the meatballs.)
  10. Serve warm.
