Description
This Honey BBQ Meatloaf recipe brings together ground beef and pork for a rich texture, mixed with Parmesan cheese and fresh parsley to enrich the flavor. Breadcrumbs soaked in milk along with minced garlic and chopped onion are incorporated to keep the meatloaf tender during baking. A homemade sauce, combining barbecue sauce, honey, and grape jelly, is spread over the loaf before and after baking for a sticky, sweet glaze.
The meatloaf is baked at 350°F in a loaf pan, first covered with half the sauce for 40 minutes, then finished with the remaining sauce and baked for an additional 20 minutes until reaching an internal temperature of 160°F. This technique ensures a moist interior with a flavorful topping.
After resting for about 5 minutes, the meatloaf can be sliced and served. It pairs well with classic sides like mashed potatoes or a fresh salad for a filling meal.
Ingredients
- 2 pounds ground beef
- 1 pound ground pork
- 2 large egg beaten
- ½ cup Parmesan Cheese grated, 50 g
- 2 tablespoons flat-leaf parsley chopped
- 2 teaspoons kosher salt
- ½ teaspoon black pepper
- ½ cup milk 122.5 g
- ½ cup dry breadcrumbs 54 g, fine
- 2 cloves garlic minced
- ¼ cup onion finely chopped
- 1 cup barbecue sauce 280 g
- ⅓ cup honey 113 g
- ⅓ cup grape jelly
Instructions
- Pre-heat oven to 350°F. Spray a large loaf pan (6½ x 10-inch) with nonstick cooking spray. Set aside.
- In a large bowl, combine the ground beef, ground pork, beaten eggs, parmesan cheese, parsley, salt, and pepper. Mix together until just combined.
- In a medium bowl, combine the milk, breadcrumbs, garlic, and onion.
- Add milk mixture to the meat mixture being careful not to overwork ingredients.
- Add the meat mixture to the prepared loaf pan, pressing the meat in tightly.
- In a separate bowl, combine barbecue sauce, honey, and grape jelly. Mix well.
- Spread half of the bbq mixture over the top of the meatloaf.
- Bake for 40 minutes.
- Spread the rest of the sauce over the meatloaf.
- Bake for 20 more minutes. The meatloaf is done when its internal temperature is 160°F.
- Allow the dish cool for about 5 minutes before cutting and serving.
