  • 1 pound carrot sliced on diagonal
  • 4 Tablespoons butter
  • 3-4 Tablespoons honey
  • 1 teaspoon salt (more to taste)
  • 1 lemon zested (approximately 1 Tablespoon)

Instructions

Roasting Carrots:

  1.  First preheat the oven to 400 degrees. Peel the carrots and slice them or cut them into desired shape. Place on a baking sheet. You can line it with foil for easier clean-up. Drizzle with melted butter, honey, and salt. Bake for about 20-30 minutes, or until desired tenderness.
  2. Toss the carrots with a spatula, halfway through the baking time, to ensure even baking. Carefully check the carrots with a fork to determine how soft and tender they are. If you prefer a slight crisp in your carrots, I suggest to cook them for about 20 minutes.Toss with fresh lemon zest and serve warm.

To Boil the Carrots:

  1. In a medium saucepan, bring water to a boil. Add salt and then carrots and cook until tender, 5 to 6 minutes. Drain the carrots and add back to pan with butter and honey. Cook until a glaze coats the carrots about 1 minute. Sprinkle with lemon zest. Season with additional salt.
